The Fiorini rack oven, available in the versions 40x60 - 40x80 - 45x65 - 50x70 - 60x80 - 80x80 - 80x90 - 75x95 - 80x100. Thanks to its heat exchanger in special thermic steel, double thickness, sectional steam generator of big power, a concept identical to that used in traditional ovens, and special adjustments for air entry and exit to the baking chamber, bakes the product on the revolvingrack in a powerful, regular, controlled flow of hot, humid air, giving a perfectly uniform result, and for bread products, a crispy, well-developed bake with flavour.
- Front section, internal pannels and floor of stainless of big tickness. External pannels: inox steel.
- Working cycle proofing-baking-cooling on the same rack. Inox steel 20/10.
- Electric control panel complete with thermostat, baking timer, steam metering device and timer.
- An electrovalve with a bell timer to indicate the end of the baking time.
- Heating by gas or diesel oil burner or by electric resistances.
- Proofing box on request.
